Malic acid is an organic compound that is a dicarboxylic acid. It is made by all living organisms and contributes to the sour tastes you can find in fruits. Sometimes, in food industries, it is used as a food additive. The salts and esters of malic acid are known as malates where the malate anion is an intermediate in the citric acid cycle.
It was first isolated from apple juice by Carl Wilhelm Scheele. However, you can also find it present in many other fruits such as apricots, blackberries, blueberries, cherries, grapes, mirabelles, peaches, pears, plums, and quince.
